Good morning, everyone!
Today, I’ve gotten my butt up and out of bed to begin meal prepping. 🙂 I didn’t want to stress about making the time to cook all day long, so I’m doing my best to get it out-of-the-way now.
I do want to get other things done instead, but meal prepping is the most important thing you can do on the weekends, to help you eat healthy throughout the week. I can’t stress that point enough. If I didn’t pre make my food, I’d be eating nothing but cheese quesadilia’s all week and going out to eat for lunch. Here’s just a few things I’ve made so far. 🙂
I have been struggling a lot lately. The allergic reaction I’m having has taken absolutely every ounce of energy out of me. I can’t figure out what’s causing it and the doctors are in no hurry to help.
It’s embarrassing being out in public but yet I have to deal with it on a daily basis. Soon I’ll be meeting new people in my job, as I take on more responsibilities at work. Don’t get me wrong, I’m VERY happy to be moving on, but my confidence level has been in the dumps lately and I’d rather just hide until the problem is fixed.
On a positive note, I may not be allergic to Shakeology but rather the coconut milk I used to make it. 😕
Even though I’m focusing on health and fitness doesn’t mean I can’t enjoy life. Today was spent at Malibu Wines and I loved every minute of it. It was wonderful hanging out with friends and meeting new people. 😀
Being healthy doesn’t mean you have to stop enjoying life.
This week was my second week of meal prepping with Blue Apron and I believe it’s been another successful cooking day!
Three recipes complete and lots of yummy food prepped for this week.
- Pork Tteokbokki with Asparagus and Spicy Black Bean Sauce
- Grains of Paradise – Crusted Steak with Mashed Plantain, Collard Greens and Ginger Peanuts
- Spring Chicken Fettuccine with sautéed Asparagus, Kale and Rosemary

I was not in the mood for meal prep today, but a few weeks ago I ran into an ad for Blue Apron. After reading about it and looking into prices I decided to give it a try.
This service gives you a few recipes to choose from for a week and will deliver the correct amount of ingredients to your doorstep on a day of your choice. I chose a saturday delivery and the ingredients arrived at my doorstep in a refridgerated box. I wasn’t home at the time of the delivery, but the items in the box were indeed cold by the time I opened it.
Even though everything was sent to me, I still wasn’t in the mood to cook but I did it anyway. I am completely blown away at how easy the recipes were to follow and it was SO awesome to have all the ingredients already measured out for you. I’ve learned that’s the part of cooking that I dread, gathering the ingrediants, measuring it and preping it.
I’ve made two of the three recipies. Seared Chicken with sauteed purple patatoes, kale and apple and Crispy Cod and Yuzu-Shoyu Soba with Cabbage and Togarashi. I’ve never cooked cod before and I think it’s turned out well.
I’ll be eating the recipies throughout the week. I sure hope they all turned out great! From what I’ve tasted so far they have, but this week will be the real test.
Now, I just have to find time to cook the steak.
I bet people are wondering why the blog is called Coffee Toffee and Fitness and well for those of you who don’t know me… I really love my coffee and I can’t go a day without it.
Just the other day, I went without coffee until 2 pm. At 1 pm I could feel the dreaded withdrawl headache starting. Caffeine is a serious drug… and a really hard habbit to kick.
I’m not the type who likes starbucks, though I’ll drink it when it’s the only thing around, I definitely prefer Peet’s over anything else.
My love for coffee all started when I found myself commuting 1 1/2 – 2 hours to work every morning. Thank you LA traffic! 😦 And my need and love for coffee has not fallen since, it’s very rare to find me without a cup of joe in my hand. 🙂
Porto’s iced coffee is also rather delicious, and it’s a very nice treat to have when I’m up in Burbank. I really don’t want to know what goes into making it so delicious though… :0
Yesterday, I spent a lot of time in the kitchen. Meal prep isn’t the easiest thing to do, but it’s so worth it in the end. I love having meals ready immediantly when I want them. Helps me stay on target and not reach for the easy junk food.

My health and fitness goals will always be a priority in life, but there are some things I will never give up. Boba is definitely one of those things.
The drink in the picture isn’t all that bad for you (I hope.) It’s a Matcha Boba Shake from the local Asian market. From what I’ve heard Matcha is a very healthy, and in my option, delicious form of green tea. Several Matcha drinks out there have lots of cane sugar added, but I don’t believe this one does and that’s why I love it!
I do my best to follow a healthy diet but no ones perfect and sometimes you just have to reach for the Boba. 🙂
I’m not one to care about the Shamrock Shake, but after a discussion acured between co workers, we realized these things are very hard to find these days.
One co worker called several different locations around Orange County, most Micky D’s employee’s said, they don’t have them and one even said, “We don’t have one yet.” It was the day before St Patrick’s Day… How could they not have them yet? When will they get them? The day after the holiday? Long story short, he was unable to find one and we went back to work.
No Shamrock Shakes in SoCal?!? Busted! 😛
The order screen said it’s a Chocolate Shake and when I tried to correct the mistake, I was told they don’t have a button for it because they’re not supposed to have it…
